Quick and Easy Dinner Recipe
With the arrival of 2016 many of us are already back at work. Apart from juggling deadlines and figuring out who has swiped your favourite pen you may find yourself giving in to the ease of unhealthy fast food. Here is a recipe that’s quick, easy and healthy for you and your family.
Vegetable Quiche (makes 12)
You’ll need:
3 eggs
Salt and pepper
250g room temperature full-fat cream cheese
1 cup full-cream milk
1 cup finely chopped cooked veg
(butternut, spinach, mushrooms, etc.)
3/4 cup grated parmesan
A muffin pan
Cupcake wrappers
How to make it:
Preheat the oven to 160’c and line a muffin pan with your wrappers
Beat the eggs, cream cheese and milk
Stir in your parmesan and cooked veg.
Season with salt and pepper.
Spoon your mixture into the muffin pan and bake for 30 minutes until golden.
Allow to set for 5 minutes and then enjoy!
